This morning I had breakfast with Thom Leonard of Independent Baking Co, who more than any other baker and heritage grain expert forged the first connections between heritage grain farmers and artisanal bakers.
He has helped found and direct bakeries with in house milling that change the shape of the grain supply chain in America. Not easy work. He has learned to choreograph the dance between heirloom seed savers, grain growers, millers, bakers and micro brewers better than anyone I know. Let us now praise pioneering bakers!
