Relieved at seeing how Charleston has survived the Hurricane Matthew chaos, I am also excited to see how Low Country ethnobotanists, chefs, food historians and farmers have restored their historic cuisine & brought the complimentaries of their heritage food crops into exciting new recipes & preparations.
What the likes of Glenn Roberts, David Shields, Sean Brock, John Radford & others have done here to deepen the appreciation of African & Caribbean influences on this regional cuisine is nothing short of amazing, on par with Dan Barber & friends synching crop Northeastern routines with six course meal ingredients, but far more culturally rooted.
